This imparts a depth of flavour and quality marbling that provides a first rate dining experience. Barcoo beef for our signature rump is highly regarded for its marbling, softer composition, flavour and finer meat texture. The cattle selected for Barcoo are grain fed and are 42 months of age. The meat is aged for a minimum of 28 days to maximise tenderness. This selection of world class beef is hand selected and exceeds MSA specifications. |
